Toddler-Approved Energy Bites
I am not a food blogger but we’re in the middle of a pandemic so anything goes these days. Plus, my picky son ate them so I need to share! The recipe came from the wonderful Kara Hoerr, a Wisconsin-based dietitian (Thanks, Kara!).
Chocolate Chip Chia Energy Bites
Ingredients
1/2 Cup Peanut Butter
1/3 Cup Honey
1 Teaspoon Vanilla
1 Cup Old Fashioned Oats
1 Cup Coconut Flakes (optional and I didn’t add it)
1/4 Cup Ground Flaxseed or Wheat Germ
1/4 Cup Chia Seeds
1/2 Cup Mini Chocolate Chips
Instructions
Pour all ingredients into bowl and mix together.
Roll into balls.
Store in an airtight container in the fridge.
I sourced all of the ingredients from Aldi. Score! But to be honest, I’m not sure if I used the right kind of vanilla.
I didn’t count how many the recipe made before eating most of them (see, I’m not a food blogger!). It makes about what you see in the image above. haha
